ROSA MASSIER'S GERMAN POTATO SALAD
Vegetable Recipe Ingredients:
3 lbs. potatoes (10 to 12 med.),
boiled in their jackets day before, then peeled & diced or sliced
1 lb. bacon, cubed & cooked (save
grease)
3/4 c. onion, chopped
6 tbsp. flour
3/4 c. vinegar
3 c. water
3/4 c. sugar
2 tbsp. salt
Celery seed
Parsley
Cooking:
Slice or dice cooked potatoes. Add onion and cooked bacon. Make dressing separately by adding the flour to bacon grease (and some margarine, if needed) and mixing well. Add vinegar, water, sugar and salt. Boil until thick. Pour over potatoes. Blend well and cook over low heat for few minutes to warm through. Add celery seed and parsley. Will serve 10 to 15.
