OLD ROW POTATO SALAD
Vegetable Recipe Ingredients:
Approximately 3 1/2 lbs. med. size red
potatoes
3 cloves garlic
1/4 c. sweet relish
2 1/4 oz. sliced olives, drained
1/4 c. each thin sliced celery and
green onions
1/2 c. olive oil
Water
1/2 c. mayonnaise
Salt and pepper
Chopped parsley
2 oz. slice pimentos, drained
Cooking:
Scrub potatoes, unpeeled, and place in large pan in about 1 inch of water. Cover and boil gently until potatoes are just tender when pierced, about 30 minutes. Drain well. When cool enough to handle, cut into 1/2 inch cubes. Combine oil and garlic in blender. Pour over hot potatoes and then let cool. Stir in pickle relish, mayonnaise, olives, celery and green onions. Add salt and pepper to taste. Cover and chill up to 24 hours before serving. Garnish with pimentos and parsley. Serve 8-10 servings.
