LOW-FAT POTATO SALAD
Vegetable Recipe Ingredients:
New potatoes, steamed & chilled
Low fat dressing
Chopped tomatoes
Green onion
Grated cheddar cheese
Bacos
Cooking:
Steam new potatoes until done. Chill. Slice potatoes 1/4 to 1/2 inch thick. Arrange on serving tray in single layer, slightly overlapping. Set aside. Make dressing of 1/2 no fat yogurt and 1/2 low fat mayonnaise, with lemon juice to taste. Drizzle dressing over center of potatoes. Sprinkle chopped tomatoes, green onion, grated cheese and bacos all over. This dish can be made for a few people or a large crowd. Cook number of potatoes you might need and add other ingredients according to number of potatoes. I sometimes line my serving tray with some salad greens for a dressier look.
