HOT POTATO SALAD
Vegetable Recipe Ingredients:
2 c. potatoes, peeled & cubed
Water
2 1/2 tsp. salt
1 onion, chopped fine
1 stalk celery, chopped fine
1/4 c. green pepper, chopped fine
1 c. low-fat cottage cheese
2 c. lettuce leaves
Cooking:
Cook potatoes in water until tender; drain. Toss potato cubes and other ingredients together; mix well. Serve on lettuce leaves. Exchanges per serving 1 cup = 1 bread, 1 lean meat, 1 vegetable; 138 calories per serving.
